Meet Dave, the heart behind Calypso
Dave is a chef first and foremost. Cooking is what he has spent his life doing, and Calypso brings that experience together with proper food, music and a warm welcome.
We will be sharing more of Dave’s story soon, including his years in the kitchen and the journey behind Calypso.
Everything is home-cooked. Nothing leaves the kitchen unless I would eat it myself.

How we cook
Seasoned properly, cooked slow
Marinades left overnight, curries built on scotch bonnet and thyme, rice and peas cooked in coconut milk, and jerk finished over heat. Caribbean cooking done the way it should be — no shortcuts, no compromise.
Home-cooked
Everything made in-house, to order, by the same small kitchen team.
Proper seasoning
Scotch bonnet, allspice, thyme and ginger — balanced, never bland.
Caribbean bar
Rum-led cocktails, Red Stripe and soft drinks from home.
Blackburn born
